Step By Step Instructions:

Avocado Toast Piled High w/ Tomatoes, Over Easy Eggs, & Turkey Bacon

I had every intention of only making Avocado Toast this morning,… but then I saw the tomato in the fridge,… and then the eggs, and then the turkey bacon wanted to join in on the fun, and before I knew it I was making homemade guacamole, frying bacon, and cooking some over easy eggs! I have no regrets. These sandwiches turned out to be amazing and I am so excited to share them with you! (You can totally opt out of making full blown guac, as avocado slices would be just as great on these glorious breakfast sandwiches!) 

*Note: I am a sucker for over easy eggs, I just LOVE them! However, I know runny eggs are not for everyone. This recipe is perfect because no matter how you take your eggs, they will be delightful on top a bed of guacamole and tomatoes!

Here is what you do:

1. Put your toast in the toaster, but don’t toast it yet, save that for right before the eggs are done  

2. Grab a small mixing bowl, and add 3 peeled, and pitted avocados 

3. Toss into the same bowl some chopped red onion, salt, pepper, 3 minced garlic cloves, lemon flavored EVOO (or regular), red pepper flakes, paprika, and drizzle with lemon & lime juices (fresh or bottled is fine), then mix well with a fork or muddler and set aside

4. Warm a frying pan over medium / med high heat and add in 4 or 5 slices of bacon. While the bacon is cooking cut the tomato into 4 or 5 slices 

5. Once bacon is cooked on both sides, remove to a paper towel lined plate

6. Add 1T of butter to the same pan and let it melt, then crack all 4 eggs into the pan & sprinkle with a dash of salt and pepper, and any other spices you like on your eggs

**This is where you toast your bread**

7. I do not flip my eggs, I move them around a little so the egg whites cook, and some of the yellow, you can also cover them with a lid and steam them a bit

8. Once you have your eggs the way you like them, turn the burner off, and remove the pan from the heat 

9. For 1 sandwich; place the toasted bread on a plate and smear a heaping pile of fresh guac on top, add the tomato slices, 2 eggs, bacon, and top layer of bread

10. Slice the sandwich in half, if desired, and enjoy! Make sure to take lots of photos, I love photos! #ColdBeerMeatSweats

INGREDIENTS:

  • 4 Slices Sandwich Bread
  • 4-5 Slices Tomato
  • 4-5 Pieces of Cooked Turkey Bacon (or regular) 
  • 2 Big Spoonfuls / Smears of Guacamole (or 6 slices of avocados)
  • 4 Over Easy Eggs 
  • 1 T Butter 
  • Salt, Pepper, Red Pepper Flakes, Paprika, Dried Parsley, Basil, & Oregano (Any other seasonings you like on your eggs)
