Step By Step Instructions:

Farmer’s Market Scrambled Egg, Heirloom Tomato, Basil, Avocado, and Cheddar Sandwich

I don’t know about you but generally, I wake up and drink my coffee, and crave some scrambled eggs! I was messing around with some veggies I got at the Farmer’s Market, while in the mood for a quick and easy breakfast sandwich, and voila, this beauty of a breakfast sandwich was born! 

Here is what you do:

1. Toast your bread in the oven or toaster, up to you 

2. Slice the tomato and sprinkle it with salt and fresh cracked pepper, and chop up the fresh basil 

3. Cut the avocado in half, and reserve the other half with the pit still in tact, (sprinkle with lemon juice and keep covered in the fridge for later use)

4. Make small slices in the other half of the avocado so you have 6 small pieces. Remove and discard the outer shell. Drizzle the slices of avocado with lemon and lime juice, and a dash of salt, fresh cracked pepper, and Northwoods Seasoning 

5. Place 1 T of butter in a small pan over medium heat and melt

6. 1 by 1, crack 4 eggs into the pan 

7. To the eggs; dash of salt, fresh cracked pepper, sprinkle of Northwoods and Fox Point Seasoning (or seasonings of your choice, I’m obsessed w/ these two I found at Penzeys

8. Using a rubber spatula, gently stir the eggs, breaking the yolks and mixing them with the egg whites, add in the shredded cheddar cheese, and some of the fresh chopped basil, and continue to stir until eggs are cooked to your liking, turn off burner and remove from heat

9. Once bread is toasted, place on a plate and smear the top half with lite mayo

10. Build: Bottom piece of bread, half the egg mixture, tomato slice, avocado slices, more cheddar, fresh basil, top piece of bread!

  • 2 Kaiser Rolls 
  • 2 Slices Heirloom Tomatoes 
  • Handful Fresh Basil 
  • 1/2 Avocado, 6 Slices  
  • Salt, Fresh Cracked Pepper, To Taste
  • Lemon & Lime Juice, Dash of Each 
  • Northwoods & Fox Point Seasoning, To Taste 
  • 1 T Butter 
  • 4 Eggs 
  • 1/2 Cup Shredded Sharp cheddar 
  • 2T Lite Mayo
